Corn Buns (Broa de Milho)

These muffins are very light and very tasty … are very good still warm with melted butter, cheese or cold cuts … for about 20 scones:
. 1/3 cup (tea) of corn flour foil type
. 3/4 cup rice flour (or flour 00 for a recipe with gluten)
.1 / 2 cup milk
. 1/2 cup of water
. 2 tablespoons sugar
. 1/2 teaspoon salt

In a saucepan bring to boil water, milk, butter, salt and sugar. Just begins to boil add the corn flour and rice flour sifted, and mix vigorously until it begins to “stick” on the bottom of the pot. Turn off the heat, pour the mixture into the bowl of the mixer and knead, cooling the mixture almost completely (about 5 minutes). Now add 1 egg at a time, stirring well each time.
