Carrots and Almonds Cake

This is a very delicate cake, very nutritious, and very good for children’s breakfast… you’ll need:

. 3 eggs (separate the yolks and whites – stiff the whites)

. 3/4 cup (teacup) of sugar

1/2 cup of corn oil

. 1 cup of rice flour

. 1 tbsp of baking powder

. 100 g of ground almonds

. 100 g of raisins

. 1 large  carrot, finely grated

Mix the egg yolks, sugar and oil . Add the grated carrot, the raisins mixed with flour and baking powder. With a wood spoon add the grounded almonds and for last the stiffed egg whites. Pour the dough into a mould and cook in the pre heated oven (180°C) for 30 minutes. Wait to cool down before taking it from the mould.
