The frittelle – fried cakes are the Carnival most famous groceries… they are found in all Venetians groceries shops, barscafes at this time they are delicious and it’s hard to resist to its odour and flavor since we are in Carnival, I give you the recipe I made last night, which was given to me by a friend Venetian DOCand that was much appreciated …. . 1 orangeGrated zest and juice

. 1 teaspoon of vanilla extract (or a few drops of vanilla essence)

. 200 g of raisins soaked in warm watersqueezed

. 50 ml di grappa o orange liquor

. peanuts seed oil for frying

. caster sugar for sprinkle

Boil the milk with the salt and sugar. When it boils add the flour and mix wellPut the mixture in the bowl of mixer (use the hook for dough), mix welladd one egg at a timestirring constantlyAdd the juice and zest of orange, grappa or liquor, vanilla, squeezed raisins .it becomes a very compact doughWith the help of 2 spoons using about 3/4 of the size of the spoon to model the little balls of doughand drop them onto the hot peanut oil.The balls should soak in the hot oilThey will float later and should be golden. Fry little at a time (6 to 8 at a time)Drain and dry them on absorbent paper.Transfer them to a serving dish and sprinkle with granulated sugarServe warm or cold ….: P
