Frittelle (Venetian Carnival Fried Cakes)
. 900 ml of milk
. 1 pinch of salt
. 125 g of caster sugar
. 500 g of sifted flour
. 3 whole eggs
. 1 orange: Grated zest and juice
. 1 teaspoon of vanilla extract (or a few drops of vanilla essence)
. 200 g of raisins soaked in warm water, squeezed
. 50 ml di grappa o orange liquor
. peanuts seed oil for frying
. caster sugar for sprinkle
Boil the milk with the salt and sugar. When it boils add the flour and mix well. Put the mixture in the bowl of mixer (use the hook for dough), mix well, add one egg at a time, stirring constantly. Add the juice and zest of orange, grappa or liquor, vanilla, squeezed raisins .it becomes a very compact dough. With the help of 2 spoons using about 3/4 of the size of the spoon to model the little balls of dough, and drop them onto the hot peanut oil.The balls should soak in the hot oil. They will float later and should be golden. Fry little at a time (6 to 8 at a time). Drain and dry them on absorbent paper.Transfer them to a serving dish and sprinkle with granulated sugar.
