Pear and Cocconut Cake
Ingredients:
. 3 whole eggs
. 2 drops of vanilla essence
. 100 g of melted butter
. 250 g of sugar
. 350 g of all purpose wheat flour
. 1 tbsp of baking powder
. 60 g of dried grated cocconut
. 3 mature williams pears peeled and diced.
Mix in a bowl the whole eggs, the vanilla and sugar and mix until fluffy. Add the warm melted butter and the sift flour and baking powder. Add the cocconut and the diced pears. You can use a round baking pan of 24 cms, buttered and floured. Bake the cake in the pre heated (180°C) oven for 40-50 minutes until golden (use a toothstick to check if it’s well baked). Allow to cool and serve…the fragrance of this cake while baking is marvellous!
