Polenta Creamy Cake
This is a quick preparing recipe. You can mix all the ingredients in the mixer. Ingredients (consider cup of tea for measuring)
. 4 whole eggs
. 2 tbsp of butter (room temperature)
. 2 cups of sugar
. 1 cup of polenta flour
. 3 tbsp of wheat flour
. 1 tbsp of baking powder
. 3 cups of milk
. 1 cup of yoghurt
. 3/4 cup of grated parmiggiano
. 1 cup of grated coconut
. 1 pinch of salt
Mix all the ingredients in the mixer. The mix remains almost liquid, don’t worry! Use a retangular baking pan (35X25cm) buttered and bake in the pre heated oven (180°C) for 35, 40 minutes, until golden and firm. Serve it cold.
