Meat-Balls (my favourite ones)
They’re easy to make…you can also freeze them to use when you want…here you’ll get 30 meatballs…
. 1 kg of minced meat
. the grated peel of a sicilian lemon (only the yellow part)
. 1/2 tbsp of salt
. freshly ground white pepper
. 3 or 4 sticks of parsley minced
. 2 eggs
. soft part of a small bread soak in 1/2 teacup of milk and squeezed
. bread crumbs
Mix the meat with all the ingredients (just a little of bread crumbs). Make the meat balls like small hamburguers…fry them or bake in the oven 12 minutes each side, 200°. After that put them into a tomato sauce that you must have done…as follows:
. 1 jar of tomato “passata”(puree)
. 1 clove of garlic
. 1 carrot and 1 thick of celery minced
. salt, pepper
. leaves of thyme and basil
Heat 1 tbsp of olive oil in a pan. Put the clove of garlic and cook until it’s golden. Add the carrot and celery and the tomatoes puree, with thyme and basil. Cook for 1 hour and 30 minutes. Then add the meat balls and cook for another 30 minutes…serve with basmati rice just cooked or vegetables…it reminds me my childhood…
