Zucchini’s Omelette
This is a light, tasty and easy making recipe. It’s perfect for the sunday brunch or to a light dinner with a green salad or a tomato salad. The ingredients are for 3-4 persons….
. 6 eggs
. 2 sliced zucchini
. salt and white pepper if possible grinded at the moment
. 2 tbsp of grated parmiggiano, grana padano or pecorino cheese.
. 1 tbsp of butter
. some leaflets of fresh thyme
Melt the butter in a non stick pan. Pour the slices of zucchini, salt, pepper and the leaftets of thyme and cook for about 4 minutes. In the meanwhile beat the eggs in a bowl with salt, pepper and the grated cheese. Pour egg mixture into the pan, and cook in medium heat, slowly. When you see that it starts to detach from the bottom of the pan it’s time to turn it onto one bigger plate. Cook the other side until the omelette is firm. Turn it to a beautiful plate and serve tepid or cold.
